This week on the show I demonstrate how to make a protein and nutrient rich breakfast favorite – Cinnamon Rolls. After a reader requested I post something using almond meal I grabbed some at my local shop and got to work. The result is a deliciously sweet marbled cinnamon roll that even those with a gluten or yeast allergies can enjoy. This recipe was adapted from Elana’s Pantry. These came back with two thumbs up with my gluten free testers!

4 Room Temperature Eggs
1 1/2 cup Almond Flour or Almond Meal **
3/4 Cup Corn Starch **
1/4 Cup Flax Seed Meal **
1/2 Teaspoon Salt
1/2 Teaspoon Baking Soda
1 Teaspoon Apple Cider vinegar
1 Teaspoon Honey
1 Tablespoon Cinnamon
1 Tablespoon Sugar
**Measured BEFORE sifting
Beat 4 eggs 2-3 min until all one consistency.
Add vinegar and honey to your eggs.
In a separate bowl sift the almond flour, starch and flax.
Add the salt and baking soda to the dry mixture.
Slowing add the dry ingredients to the wet – mixing as you go.
Add half the dough to a pastry pipping bag.
Add the cinnamon and sugar to the remaining half of the dough.
Add the cinnamon flavored batter to your second pipping bag.
Refrigerate the two bags for 1 hour
Grease a muffin tin liberally or use paper liners
Remove the bags from the fridge and clip the ends of the pipping bags you want about a 1/4 inch opening
Hold both bags at once and start filling the tin. The video shows how I did this better than I can write it.
Fill each cup about 2/3 full. I made 6 rolls with this but they rise quite a bit. I could have probably have made at least 8.
Bake in a 350 degree oven 15-18 min until a toothpick come out clean.
Cool on a wire rack and serve warm. Store extras in Ziploc bag or Tupperware in the fridge.
