This week I am sharing a recipe from 100 days of whole food. The team over at 100 days made over the every day buttermilk biscuit to a healthier version of its former self. I adapted their recipe to be even lighter and honestly you can’t even tell this is made with whole wheat flour. The trick is whole wheat pastry flour, it’s lighter in texture. If you can’t find this at your local store, you can make this with regular whole wheat flour as well. Bob’s Red Mill makes one that you can get on amazon if you are so inclined – Bob’s Red Mill Organic Whole Wheat Pastry Flour.

2 cups whole wheat pastry flour
4 teaspoons baking powder
1/4 teaspoon salt
1/2 stick chilled butter
1 cup buttermilk
Add 2 cups whole wheat pastry flour and 4 teaspoons baking powder and 1/4 teaspoon salt to a sifter.
Sift dry ingredients into a large bowl
Cut chilled butter into small pieces and put into the flour mixture
Use a pastry tool, or 2 forks to break butter down further in the bowl. You want small pea size bits of butter mixed into the flour
Add buttermilk- mix until just combined. Do not over mix, it will be kind of chunky.
Flour your hands and knead a couple times in the bowl
Flour your work surface and turn out the dough into the floured surface. Knead the dough a couple more times if it is still chunky. You may have some flour left in the bowl that did not get mixed in- that is fine, just leave it. You will be adding some with your floured hands and counter.
Pat the dough into a flat round 1/2 to 3/4 inches think.
Use a cookie cutter or glass to cut out the biscuits. Dip the cutter in flour.
Place biscuits on a parchment lined baking sheet.
Bake 10-12 min at 450 degrees, until just turning golden brown.
Enjoy now, or freeze extras in a gallon sized freezer bag. To reheat just pop them in a warm oven for a 5-10 min
