Everyone can use a good roll recipe right? This week I put together a relativity fast roll recipe with a 100% whole wheat french bread dough. I kicked my rolls up a notch by hiding a little cheese inside each roll. As they bake, the cheese melts and the rolls get a little cheesy hole inside. These rolls are baked with steam, which gives them the chewy crust french bread is known for. These wheat rolls have a wonderful crust and light interior.

2 teaspoons yeast
1/2 cup warm water
2 teaspoons salt
6 cups (900 grams) whole wheat flour
2 cups warm water
1 tablespoon honey
1/4 cup coconut oil melted
Cubes of cheese – Optional. Amount depends on the size of rolls and preference.
Mix the yeast into 1/2 cup warm water.
Mix salt into flour in your mixer
In a separate bowl mix 2 cups warm water with honey, coconut oil, and egg. Break up the egg mixture with a fork.
Add the yeast and water mixture to the other liquids.
Add half the water mixture to your bowl. Start the mixer.
As it mixes slowly add the remaining water mixture.
Knead by machine for 10 min, or by hand for 20 min. Make sure it passes the window pane test.
Let the dough rest for 75 min. in a warm place, like a 90 degree oven.
To check if it has risen enough wet your finger and press it into the dough. If the hole doesn’t fill up again the dough has risen enough.
Form the dough into rolls. Pull off a chunk of dough, insert cheese into the roll and fold the dough over around the cheese until the top is taught.
Raise the rolls on a cookie sheet for 40 min.
After the 40 min rise, prepare a oven safe dish with a tray of ice cubes.
Put the cookie sheet of rolls and the ice cubes into a 450 degree. Rolls will be done in 13-16 min when the internal temp is around 210.
Serve slightly warm, or store in an airtight container.
