In this week’s video episode I show you a healthy whole wheat cracker recipe. Now that I try to eat more organic and whole foods, I cut out a lot of snacks I loved. Crackers are at the top of my list of things I miss. I looked at the organic crackers at the store and they were about 3 times the price of the regular ones. NO WAY! So I decided to make my own. Not only were they easier than I expected, they tasted amazing!
Now you can have your crackers and eat them too, without the high cost, or chemicals! This recipe is full of great ingredients, like honey, coconut oil and whole wheat flour, instead of white sugar, butter, and white flour. It’s an easy decision for me!

1 3/4 cup whole wheat flour
1/4 teaspoon salt (optional) + more for sprinkling
5 tablespoons solid coconut oil
2 tablespoons honey
1/4 teaspoon white vinegar
1/4 teaspoon vanilla
1/4-3/4 cup cold water
Mix flour and salt in a large mixing bowl
Using two forks or a pastry tool, cut in the coconut oil until it is in pea sized bits in the flour.
Add the honey, vinegar and vanilla. Mix to combine.
Slowly pour in water. The dough will be flaky but it has enough water when it can form a ball and stay together
Turn dough out onto a floured surface and knead 5-7 times.
Wrap the dough and cool it in the fridge 10-20 min. You can come back to this anytime in the next few days.
Take the dough from the fridge. Cut into 2 even balls.
Flour your counter and put the dough down. Place plastic wrap over the dough.
Roll the dough very thing! VERY THIN, almost like paper. This might take a little time. It is a lot easier if you split the dough into two balls like I recommended in the video and instructed above. Try and make it all the same thickness.
Cut the dough into squares with a pizza cutter dipped in flour. Transfer to a parchment lined baking sheet. Sprinkle with salt if desired.
Repeat with the second ball of dough.
Bake at 400 degrees for 7-15 min. The thinner the crackers are the quicker they cook.
Cool, eat, or store in a airtight container.
