In this week’s episode I am featuring a treat inspired by Valentine’s day, Gluten Free Chocolate Cake! The holiday of luuuv is just around the corner so I thought I would share something a little different to help all you couples out there! Not only is this recipe amazing, its also gluten free and made with super nutritious coconut flour! You can use this batter for cupcakes, cakes or anything in between – it is super versatile.

1/2 + 1/3 Cup Sugar
1 stick butter
1/4 Teaspoon Vanilla
1 Cup Coconut Flour
3/4 teaspoon baking soda
1/4 Teaspoon baking powder
1/2 Teaspoon Salt
1/2 Cup unsweetened cocoa powder
2/3 cup half and half
Add the Sugar, butter and vanilla and cream with a mixer. Once the butter, sugar and vanilla are a gritty, even mixture you can start adding the eggs. With the mixer going add the eggs one at a time, not adding the next until the previous is fully incorporated.
Beat on high for 3 min.
In a separate bowl add all the dry ingredients and stir.
Start the mixer. Add the half and half and the dry ingredients to the mixer, a bit at a time back and forth until everything is all mixed.
Beat on high for 5 min. ( you may need to scrape the bowl a couple times during the 5 mins. I stopped a couple times to do that)
Spoon batter into cake pan, ramakins, or a cake pan ( for an entire 8 inch round cake pan double this recipe)
Fill to the top, pat the batter in to get rid of any air holes hiding, and smooth the tops. Smoothing the top makes them turn out prettier. If you are frosting the tops you can skip this step if you want! No one will know!
Bake at 350 degrees 25-30 mins or until a toothpick stuck into the middle comes out clean.
Cool cupcakes in the tin for 5-10 min and wait until the are completely cool before you frost them! Seriously, don’t be a fool, wait or you will have a big mess on your hands and you will be kicking yourself!
